Salad dressing

  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon (affiliate link)sugar
  • 1 ½ tablespoons (affiliate link)fish sauce
  • 1 teaspoon chili flakes adjust to taste

Salad assembly

  • 1 cup cucumber sliced thinly
  • 1 large carrot julienned
  • 1 small red onion sliced thinly
  • ½ cup fresh mint leaves roughly chopped

Instructions
