When I got home, I couldn’t stop thinking about how much I loved this easy chickpea salad I got from a restaurant we tried. so I decided to attempt my own version of the chickpea salad.
I should warn you that I’m not a cook. My general philosophy in the kitchen is if it takes more than 10 minutes to make, it’s too much work.
I eat my salad plain, but you could always add flavour by adding your favourite salad dressing to the recipe. Even a splash of lemon juice with fresh herbs and black pepper would also go a long way. As a bonus, this salad also keeps incredibly well in the fridge and works just as well for topping a bed of your favourite greens.
Easy Chickpea Salad Recipe
This easy chickpea salad is a simple rendition I made based on a yummy salad I tasted last weekend. This one's so yummy, but it's something you won't regret.
Ingredients
- 1 can chickpeas
- ½ cup olives sliced
- 1 small onion sliced
- 1 small red onion
- ½ medium cucumber English
- 1 pint cherry tomatoes
Instructions
- Drain the chickpeas. Dice up the red onion and cucumber.
- Quarter the cherry tomatoes. Mix everything up in a bowl and add your favourite dressing
