This is a five-ingredient tomato salad dressed with olive oil, red wine vinegar, basil, and oregano โ€” no cooking required. It takes ten minutes of actual work, costs almost nothing, and the marinating time does most of the heavy lifting for you.

The short version of why this works

Two things matter here. First, grinding the dried herbs before they go in โ€” whether in a mortar or between your palms โ€” breaks the cell walls and releases the volatile oils that would otherwise stay locked inside. Whole dried oregano sitting in a bowl of tomatoes barely contributes flavor; crushed oregano does. Second, the one-hour rest isnโ€™t optional. Salt draws moisture out of the tomatoes and onion, which combines with the olive oil and vinegar into a light, savory liquid that becomes the dressing. Skip the rest and you have underdressed vegetables; honor it and the whole bowl ties together.

Troubleshooting

Beyond that, the tomatoes get progressively softer and the liquid becomes watery rather than savory. Store it covered in the bowl you mixed it in; thereโ€™s no need to separate components. Pull it out of the fridge 20โ€“30 minutes before serving so the olive oil, which solidifies slightly when cold, returns to liquid. Dress it at the table if youโ€™re serving guests โ€” a pre-dressed salad thatโ€™s been sitting out for more than two hours starts to look tired. The accumulated liquid at the bottom is worth keeping; serve it alongside with bread.

Ingredients
 
 

  • 5 pieces Roma tomatoes cut into halves, add more if you desire
  • ยฝ small red onion (or to taste), finely chopped
  • ยผ cup olive oil
  • 1 handful basil to taste (i use a lot)
  • 2 teaspoons dried oregano to taste
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons red wine vinegar

Instructions
 

  • Combine onion and tomatoes in a bowl once they are cut and chopped.
  • Add the olive oil.
  • Grind the oregano and basil in a mortar and pestle (if you don't have one, DON'T WORRY!!! just pour some in the palm of your hand and grind your palms together over the bowl. This will release the flavor much more effectively.
  • Add salt and pepper.
  • Add the red wine vinegar and stir.
  • This is important: Let this sit for at least an hour. The flavors need to blend and marinade. So go ahead and go to the gym, do your laundry, or better, Call your mom and express your gratitude to her! The longer you let it sit, the better it's going to taste.

Notes

The salad creates its own broth after it sits a while, and it tastes amazing. I actually drink it (judge me) or dip bread in it.
