Ingredients
 
 

  • 1 pound shrimp peeled and deveined
  • 2 large mangoes ripe, peeled and diced
  • 1 medium red bell pepper thinly sliced
  • 1 medium cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro fresh, chopped
  • 2 medium limes juice
  • 2 tablespoon olive oil
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste

Instructions
 

  • Begin by preparing the shrimp: Bring a pot of water seasoned with salt to boil, then add the shrimp and cook for 2-3 minutes until they become pink and opaque. Drain them and let them cool before using.
  • Once the shrimp have cooled, peel and devein them, then chop them into bite-sized pieces.
  • Prepare the mangoes, bell pepper, cucumber, red onion, and cilantro as directed.
  • Mix lime juice, olive oil, salt and pepper, whisking them together to make the dressing.
  • Mix all the ingredients in a big bowl and toss them together gently to coat with the dressing.
