  • 2 tbsp unsalted butter melted
  • 1 large egg large, at room temperature

For the Salad

  • 2 cups mixed salad greens freshly washed and dried
  • 1 cup cherry tomatoes halved
  • 1 small cucumber sliced thinly
  • ½ medium red onion thinly sliced

For the Lime Dressing

  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lime juice about 2 limes
  • ½ tsp honey
  • 1 clove garlic minced
  • ¼ tsp salt or to taste
  • ¼ tsp black pepper freshly ground

Instructions
 

  • Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper for the cornbread croutons.
  • In a large mixing bowl, whisk together the cornmeal, flour, baking powder, and salt. In another bowl, combine milk, melted butter, and egg until smooth.
  • Pour the wet ingredients into the dry ingredients, mixing until just combined. Pour into a prepared baking sheet, smoothing the top.
  • Bake for 15–20 minutes or until the cornbread is golden and a toothpick comes out clean. Let it cool briefly before cutting into crouton-sized cubes.
