Delicious And Fresh Watermelon Salad

Delicious And Fresh Watermelon Salad

This is a five-ingredient, no-cook salad that comes together in 15 minutes. Cubed watermelon gets tossed with lime juice and olive oil, then topped with feta, black olives, and fresh mint. The salt from the cheese and olives pulls out the watermelonโ€™s juice and creates a light dressing all on its own โ€” which means itโ€™s genuinely satisfying, not just something to eat alongside a meal.

Substitutions that actually work

  • Feta cheese: Regular or light both work. If you want more creaminess, a soft goat cheese crumbles well and has a similar salty tang.
  • Black olives: Kalamata olives are a stronger swap โ€” more briny and meaty, which adds more substance to each bite. Canned black olives are milder if you want the salt without much olive flavor.
  • Limes: Lemon juice works in a 1:1 swap. The flavor is slightly less sharp but still cuts the sweetness of the watermelon.
  • Fresh mint: There is no good dried substitute here โ€” the volume and brightness fresh mint brings is structural to this salad. If youโ€™re out, fresh basil is the closest alternative.

The technique that matters

Cut your watermelon into uniform cubes โ€” roughly 1-inch pieces โ€” so every forkful picks up a bit of everything. Uneven chunks mean some bites are all watermelon and others are all feta. When you toss the watermelon with the lime juice and olive oil first, before adding the other ingredients, the acid starts to season the fruit directly rather than just sitting on top. Add the feta, olives, and mint last and toss gently โ€” you want the feta to stay in visible crumbles, not dissolve into the dressing. Dress it at the table โ€” a pre-dressed salad goes limp fast.

Common problems and fixes

  • Salad is watery by the time you serve it: This happens when the feta sits on the watermelon too long before serving. Combine everything right before eating and use a slotted spoon to serve, leaving excess liquid in the bowl.
  • Watermelon tastes bland: Under-ripe watermelon wonโ€™t sweeten up with dressing. Taste a cube before you start โ€” if itโ€™s flat, a small pinch of flaky salt directly on the cubes before tossing can draw out more flavor.
  • The dressing pools at the bottom instead of coating: Make sure the watermelon cubes are dry on the outside before tossing. Pat them with a paper towel after cutting โ€” excess surface moisture prevents the olive oil from adhering.
  • Mint turns dark and wilted: Chop the mint right before serving, not ahead of time. Cut mint oxidizes quickly and loses its bright color and fresh flavor within 20 minutes.
  • Salad isnโ€™t filling enough as a main: Double the feta and olives rather than the watermelon โ€” the protein and fat in the cheese are what make this hold you over. A slice of crusty bread alongside also helps.

Make-ahead notes

You can cube the watermelon and store it in an airtight container in the fridge for up to 24 hours. Keep the feta, olives, and mint separate until youโ€™re ready to serve. Do not pre-mix the full salad โ€” once the lime juice and feta hit the watermelon, the fruit releases liquid steadily and the texture softens within 30 minutes. If youโ€™re bringing this somewhere, pack the components separately and toss on-site. Leftovers are edible the next day but the watermelon will be noticeably softer and the bowl will have a lot of liquid; drain it well and eat it quickly.

  • 4 cups watermelon cubed

  • 2 medium limes juiced
  • 2 tablespoons olive oil
  • ยผ cup fresh mint chopped

Instructions

  • Toss the watermelon with the juice of the two limes and the olive oil.
  • Sprinkle it with crumbled feta cheese, chopped back olives and the fresh mint and toss gently.

Notes

Note that the addition of salt through the cheese will release some of the liquid from the watermelon. This is normal. If you decide to share, serving with a slotted spoon might be the best way to ensure the liquid stays at the bottom.

Frequently asked questions

Can I make this salad ahead of time for a party?

Prep the components ahead, but donโ€™t assemble until youโ€™re ready to serve. The watermelon releases a significant amount of liquid once itโ€™s dressed and salted by the feta, so a pre-assembled salad will be soupy within 30 to 45 minutes.

How do I pick a good watermelon for this?

Look for a watermelon that feels heavy for its size and has a creamy yellow field spot on the bottom where it rested on the ground. A hollow sound when you knock on it is a reasonable indicator of ripeness, though the weight test is more reliable.

Can I use seedless watermelon?

Yes, seedless watermelon works perfectly and is easier to prep. If youโ€™re using a seeded variety, just remove the seeds before cubing โ€” theyโ€™re not a flavor problem, just a texture one.

Is this salad filling enough to eat as a lunch on its own?

For most people, a full serving with 150g of feta and a quarter cup of olives is substantial enough for a light lunch. If youโ€™re hungrier, add extra feta or serve with a piece of bread or a hard-boiled egg on the side.

What if I donโ€™t have a lime juicer โ€” does it matter how I juice the limes?

Any method works as long as you get the seeds out. Roll the limes firmly on the counter before cutting โ€” it breaks down the membranes inside and youโ€™ll get noticeably more juice from each one.

Can I use a different type of melon if watermelon isnโ€™t available?

Cantaloupe or honeydew both work as substitutes. Theyโ€™re less watery than watermelon, so the salad will be slightly drier โ€” you may want to add a small splash of extra lime juice to compensate.
