  • 9 ounces halloumi cheese sliced into 1cm thick slices
  • 2 cups watermelon cubed
  • 1 medium cucumber sliced into half-moons
  • ¼ cup extra virgin olive oil
  • 1 tablespoon fresh mint leaves chopped

  • ¼ teaspoon black pepper freshly ground

Instructions
 

  • Preheat your grill pan over medium-high heat until it reaches around 200°C (392°F).
  • Place the halloumi slices on the grill pan and cook for about 2-3 minutes on each side until grill marks appear and the cheese is golden brown.
  • In a mixing bowl, combine watermelon cubes, cucumber slices, olive oil, mint, lemon juice, and black pepper. Gently toss until well mixed.
  • Transfer the salad to serving plates and top with warm grilled halloumi slices. Drizzle any remaining dressing over the dish.
