This is a mayo-free egg salad built with Greek yogurt, pico de gallo, cumin, and sliced avocado. It comes together in 30 minutes, costs almost nothing to make, and holds up well in the fridge for several days โ€” which is the real reason to keep it in rotation.

What makes this version work

Two things matter here. First, Greek yogurt does more than replace mayo โ€” its thickness clings to the egg pieces rather than pooling at the bottom of the bowl, so every bite is evenly coated. Full-fat or 2% yogurt works best; fat-free tends to weep liquid as it sits. Second, using only half the pico de gallo in the mix and reserving the rest for topping keeps the salad from going watery. Instructions
 

  • Peel the hard-boiled eggs and chop them into roughly 1/2-inch (1cm) pieces. You want a mix of chunky and fine bits for varied texture.

  • In a medium bowl, mix the chopped eggs, yogurt, cumin, and 1/4 cup of the pico de gallo until the egg yolks have broken up a bit and the pico de gallo is evenly distributed. Season with salt and pepper to taste, starting with 1/4 teaspoon of each and adjusting. If desired, fold in an additional 2 tablespoons of pico de gallo, but note that more pico will thin out the salad.
