Asian Slaw

Ingredients

• For the Slaw:
• 2 cups of shredded green cabbage
• 2 cups of shredded carrots
• 1 cup of cooked edamame (I buy the ready to eat ones – so much easier)
• 1/2 red bell pepper, thinly sliced
• 4 scallions, thinly sliced
• 1/2 cucumber, thinly sliced
• 1/2 of an avocado, diced
• 2 tablespoons of pickled red onions
• toasted almonds (optional)
• a sprinkle of toasted sesame seeds (optional)
• small bunch of cilantro, roughly chopped
• For the Dressing:
• 2 tablespoons of olive oil
• 2 teaspoons of toasted sesame oil
• 2 tablespoons of rice vinegar
• 2 teaspoons of low-sodium soy sauce
• 1 teaspoon of honey
• 1/2 teaspoon of sriracha
• juice of one lime
• 1/2 inch piece of ginger, grated on a microplane
• 2 cloves of garlic, grated on a microplane
