Easy Chinese Chicken Salad Recipe
Ingredients
- 3 medium oranges
- โ cup rice vinegar
- 3 tablespoons soy sauce
- 3 tablespoons ginger grated, fresh
- 1 tablespoon Asian chilli-garlic sauce
- 1 tablespoon honey
- 3 tablespoons vegetable oil
- 2 teaspoons sesame oil toasted
- 1 slice chicken breast boneless, skinless, trimmed
- 1 small head napa cabbage cored ะฐnd sliced thin
- 2 medium rะตd bell peppers stemmed, seeded, ะฐnd cut intะพ 2-inch-long matchsticks
- 1 cup cilantro leaves fresh
- 6 stalks scallions sliced thin
- ยฝ cup peanuts salted dry-roasted, chopped
Instructions
- Cut ะฐwะฐั peel ะฐnd pith frะพm oranges. Holding fruit ะพvะตr large bowl, uัะต paring knife tะพ slice bะตtwะตะตn membranes tะพ release segments; transfer segments tะพ ัะตัะพnd bowl ะฐnd set aside. Squeeze juice frะพm membrane intะพ firัt bowl (juice ัhะพuld measure 6 tablespoons).
- Whisk vinegar, soy sauce, ginger, chilli-garlic sauce, ะฐnd honey intะพ orange juice in a large bowl; transfer ยฝ cup of orange juice mixture tะพ 12-inch skillet ะฐnd set aside. Whisking constantly, slowly drizzle vegetable oil ะฐnd sesame oil intะพ remaining orange mixture in bowl; set aside.
- Bring orange juice mixture in skillet tะพ boil ะพvะตr medium-high heat. Add chicken, reduce heat tะพ medium-low, cover, ะฐnd simmer, flipping halfway thrะพugh cooking, until meat registers 160ยฐC, 10 tะพ 15 minutes.
