This Vietnamese chicken salad is a shredded rotisserie chicken dish built around quick-pickled carrots and cucumber, crunchy cabbage, fresh herbs, bean sprouts, toasted peanuts, and a sharp fish sauce and lime dressing. The whole thing comes together in 15 minutes once the vegetables have had their pickling time. It makes a generous batch, which is exactly why it earns a regular spot in a weekday rotation.

What makes this version work

Two things carry this recipe. First, the quick pickle: salting the cucumber and carrot matchsticks with rice wine vinegar and caster sugar for 20 to 30 minutes draws out moisture and seasons the vegetables all the way through, so they contribute real tang rather than just crunch. Skip that step and the salad tastes flat. Second, the dressing is built to cut through the richness of rotisserie chicken โ€” fish sauce and lime juice together give you salt, umami, and acid in one hit, and the soft brown sugar rounds it out without making it sweet. That balance is what keeps the whole bowl from tasting one-dimensional.

Mistakes to avoid

Ingredients
 
 

  • 2 small carrots approximately 150g / 5oz, peeled and cut into matchsticks
  • 1 small cucumber approximately 200g / 7oz, deseeded and cut into matchsticks
  • ยฝ teaspoon sea salt
  • 2 tablespoons rice wine vinegar for the quick pickle
  • 1 tablespoon caster sugar for the quick pickle
  • ยฝ small red cabbage approximately 200g / 7oz, finely shredded
  • 1 cup bean sprouts 100g / 3.5oz
  • ยฝ cup fresh mint leaves loosely packed
  • ยฝ cup fresh Thai basil leaves loosely packed, or regular basil
  • โ…“ cup raw peanuts 50g
  • 1 whole rotisserie chicken approximately 400g / 14oz shredded meat
  • 3 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 2 tablespoons soft brown sugar
  • 2 small red chillies finely diced
  • 1 thumb-sized piece fresh ginger approximately 1 tablespoon / 15g, finely diced

Instructions
 

  • Deseed the cucumber and peel the carrots. Cut both into thin matchsticks, approximately 5cm (2 inches) long and 3mm thick.

  • Place in a bowl with the sea salt, rice wine vinegar, and caster sugar for around 20 to 30 minutes (this will pickle the vegetables slightly, giving a nice tang to the salad).

  • Finely shred the red cabbage and place it into a large bowl along with the bean sprouts, basil and mint.

  • Toast the peanuts in a dry saucepan over low heat until they begin to brown. Remove from the heat and roughly chop. Add half of the peanuts to the salad bowl.

  • Remove and discard the skin and bones from the rotisserie chicken. Roughly shred the meat into the bowl by pulling it apart with your fingers or two forks.

  • Prepare the dressing by finely dicing the ginger and chillies and placing them in a small bowl. Add the fish sauce, lime juice and soft brown sugar and stir to combine.

  • Drain any excess liquid from the pickled cucumber and carrots, then add them to the large salad bowl. Pour the dressing over the salad and toss everything together until evenly coated.
