Pecan Ingredients

  • 2 cups pecans raw and halved
  • 2 tablespoons coconut oil melted (or canola/grapeseed oil)
  • 2 tablespoons brown sugar
  • ¼ teaspoon sea salt

Chicken Ingredients

  • 8 ounces chicken breast boneless and also skinless
  • ¼ cup balsamic vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon dijon mustard
  • 1 clove garlic minced

Salad Ingredients

  • 5 cups baby spinach
  • 3 small figs sliced
  • 2 small portobello mushrooms sliced
  • 2 ounces goat cheese soft and crumbled

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 ½ tablespoons balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey


Pecan Instructions

  • Preheat oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Combine pecans coconut oil, brownish sugar and sea salt, mix well and spread over a cooking sheet.
  • Bake for 15 to 20 minutes, viewing very closely, making sure they do not overcook.
  • Remove from stove and let cool for 10 minutes.
  • When cooled, reserve 1/4 cup for salad and store the remaining pecans in an airtight container in the fridge for as long as 2 to 3 weeks.

Chicken Instructions

  • Combine all ingredients as well as season chicken for at the very least 30 minutes. Preheat the stove to 400 degrees Fahrenheit.
