Yummy Balsamic Chicken Salad

Ingredients
Pecan Ingredients
- 2 cups pecans raw and halved
- 2 tablespoons coconut oil melted (or canola/grapeseed oil)
- 2 tablespoons brown sugar
- ¼ teaspoon sea salt
Chicken Ingredients
- 8 ounces chicken breast boneless and also skinless
- ¼ cup balsamic vinegar
- 1 tablespoon olive oil
- ½ teaspoon dijon mustard
- 1 clove garlic minced
Salad Ingredients
- 5 cups baby spinach
- 3 small figs sliced
- 2 small portobello mushrooms sliced
- 2 ounces goat cheese soft and crumbled
Dressing Ingredients
- 2 tablespoons olive oil
- 1 ½ tablespoons balsamic vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon honey
Instructions

- Preheat oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper.
- Combine pecans coconut oil, brownish sugar and sea salt, mix well and spread over a cooking sheet.
- Bake for 15 to 20 minutes, viewing very closely, making sure they do not overcook.

- When cooled, reserve 1/4 cup for salad and store the remaining pecans in an airtight container in the fridge for as long as 2 to 3 weeks.
Chicken Instructions
