Instructions
- Heat the oven to 425ยฐF / 220ยฐC. Drain, rinse, and dry the chickpeas very well. Toss them with 1 tbsp olive oil, 1/2 tsp kosher salt, 1/2 tsp smoked paprika, 1/4 tsp garlic powder, and 1/8 tsp black pepper until evenly coated.
- Roast the chickpeas: Spread on a rimmed baking sheet in a single layer. Roast for 18โ22 minutes, shaking the pan halfway, until deep golden and audibly crisp. Set aside to cool for 5 minutes so they firm up.
- Whisk the dressing: In a small bowl, whisk mayonnaise, lemon juice, Dijon, Worcestershire, minced anchovies, and grated garlic until smooth.
