I have a secret to admit. I’m obsessed with turmeric. Like, I dream about ways to put it in any and every recipe I’m coming up with. I seriously wish I could! The ONE thing stopping me is that it turns everything this incredible, vibrant yellow that looks great but might get old fast if every meal I post is bright yellow, like colourful yellow spaghetti or bright yellow chocolate ice cream. One thing I couldn’t resist adding to was chicken salad, like in this tropical turmeric chicken salad.

Ingredients
 
 

Salad Ingredients

  • 5 cups chicken shredded and diced
  • 3 stalks celery finely diced
  • ½ cup red onion finely diced
  • ½ cup carrots shredded
  • 1 cup pineapple diced
  • ½ cup almonds slivered
  • 3 stalks green onions diced
  • 1 ½ cups turmeric mayo

Turmeric Mayo Ingredients

  • 1 ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 medium egg
  • ½ teaspoon salt
  • ½ teaspoon mustard ground
  • 2 teaspoons turmeric root ground
  • 1 teaspoon ginger ground
  • 3 tablespoons honey

Instructions
 

  • In a large mixing bowl, put all ingredients except mayo.
  • Mix all olive oil, lemon juice, egg, and mustard to prepare mayo. Blend using an immersion blender.
  • Once the mayo base is prepared, add in honey, turmeric and ginger and blend in a food processor or using immersion blender until mixed well.
  • Add mayo to chicken and vegetables and mix well.
  • Refrigerate until ready to serve.
  • You can put it into tacos and enjoy savouring them.
