  • 2 medium chicken breasts skinless and boneless
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes
  • ½ medium cucumber
  • ¼ medium red onion
  • 1 medium avocado
  • ¼ cup feta cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard


  • Start by grilling the chicken breasts until they are cooked through.
