  • 1 medium zucchini Sliced into thin rounds
  • 1 cup red bell pepper Seeded and julienned
  • ½ cup fresh basil leaves Torn into pieces
  • ¼ cup Parmesan cheese Shaved

For the lemon herb dressing

  • 1 whole lemon Zested and juiced
