This week’s recipe assignment is one of those “Ugh, I hate potato salad” moments. Well, let me tell you, I guess I had never tried sweet potato salad with avocado herb dressing! Really, I’ve only ever tried potato salad with mayo, and I stand by my decision that that is gross until this recipe.

This sweet potato salad with avocado herb dressing is very filling, so this can be enough for you. There’s no need to have another side dish. Well, that’s for me, but you can always opt to have the main course if this won’t be enough. Try the scrumptious and healthy recipe.

Ingredients
 
 

Salad Ingredients

  • 3 small sweet potatoes
  • ½ small onion minced
  • cup celery diced
  • 1 dash cayenne
  • 1 dash salt
  • 1 dash pepper

Dressing Ingredients

  • 1 big avocado skin and seed removed
  • 1 clove garlic
  • ½ medium lemon juiced
  • ½ cup water
  • cup chives chopped

Instructions
 

  • Peel and cut the sweet potatoes into cubes. Place a single layer in a steamer and steam until tender. Let potatoes cool while you begin to prepare the remainder.
  • Combine all the dressing ingredients in a blender or food processor for an easy 30- to 60-second blend. You’re dressing is ready!
  • Once the potatoes are cooled, combine in a large bowl with the onions and celery. Pour in about half of the dressing and mix all ingredients. You can decide if you’d like less or more dressing or save the remainder for a kale salad later.
