Ingredients
 
 

  • 2 cups pasta (penne, fusilli, or farfalle work well)
  • 1 ½ cup cherry tomatoes halved
  • 2 cups mozzarella fresh, cubed or mozzarella balls (bocconcini)
  • 1 cup basil leaves, fresh, roughly torn
  • ¼ cup olive oil extra-virgin
  • 2 tablespoons balsamic glaze or reduction
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions
 

  • Fill a large pot with water and add salt. Heat until boiling, then add the pasta. Cook following the package directions until the pasta is firm to the bite (al dente). Drain the pasta and rinse it with cold water to halt further cooking. Set aside.
  • As the pasta cooks, cut the cherry tomatoes in half, cube the mozzarella (or use mozzarella balls), and tear the basil leaves.
  • Combine the cooked pasta, cherry tomatoes, mozzarella, and basil in a large bowl.
  • Add a drizzle of extra-virgin olive oil and balsamic glaze. Season with salt and pepper to taste. Toss gently to combine all ingredients.
  • Chill in the refrigerator for about an hour. This will allow the flavors to meld.
