I know it’s not summer yet, but for some reason, this Sriracha Summer Salad screams SUMMER. Right from the cob, sweet, fresh corn is mixed with black beans, ripe tomatoes, creamy avocado, then tossed with a spicy Sriracha dressing.

Quick, Easy and Yummy Sriracha Summer Salad

Now, this Sriracha Salad Dressing is only four ingredients plus salt and pepper and whips up in no time. This spicy dressing goes on any salad or veggies – just pour and toss. Bring this to your next picnic or potluck, and they will love you. If you like a little less spice in your life, reduce the tablespoon of Sriracha to a teaspoon, or even less if you’re scared. Don’t be afraid!

Oh Sriracha, how I love thee! I have known about this divine hot sauce for many years, but just not smart enough to buy any until a few years ago. Back in the 90′s (yep, feeling old saying that!), one of my friends, named Vu, had this hot sauce always in his fridge. I don’t think he ever had anything else but Sriracha and beer. Bachelors! But I do appreciate him introducing this to me because it’s fantastic.

Ok, now, back to this salad dressing and yummy vegetarian dish at hand. Here’s the recipe, easy as pie, except pies, are hard to make.
