I've been prepping this mayo-free chicken salad on Sundays and eating it for lunch all week. It makes enough for at least 4 lunches for me and a couple for a friend or hungry husband.

Instructions
Boil chicken breasts and then shred with a fork to desired thickness – add shredded chicken to a large bowl.
Chop apples, so they are about 1/2-inch thick and add to bowl.
Add lemon to keep apples from browning.
Chop tomatoes and lettuce. Then add to bowl.
Add feta into the bowl.
Add olive oil to the bowl.
Add kosher salt into the bowl.
Mix well.
Chill and eat with a warm pita.
