Instructions
Toast the Almonds: Preheat the oven to 350°F / 175°C. Spread the sliced almonds on a rimmed baking sheet and bake for 6–8 minutes, shaking once, until golden and fragrant. Transfer to a plate to cool completely.
Season the Chicken: Pat chicken breasts dry. Season evenly with kosher salt and black pepper.
Sear and Finish the Chicken: Heat avocado oil in a 12-inch skillet over medium-high until shimmering. Add chicken and sear 3–4 minutes per side until golden. Reduce heat to medium-low, add 2 tbsp water, cover, and cook 4–6 minutes more, until the thickest part reaches 165°F / 74°C on an instant-read thermometer. Transfer to a board, rest 5 minutes, then slice thinly across the grain.
Whisk the Dressing: In a medium bowl, whisk mayonnaise, rice vinegar, soy sauce, honey, Dijon, toasted sesame oil, ginger, garlic, and lime juice until smooth and emulsified. Taste and adjust acidity or sweetness to preference.
Toss the Salad Base: In a large bowl, combine broccoli slaw, red bell pepper, sugar snap peas, scallions, and cilantro. Add about two-thirds of the dressing and toss to coat, lifting and folding to distribute evenly.
