Instructions
Preheat your grill or stovetop grill pan to medium-high heat. Make sure it’s well-oiled to prevent sticking.
Lightly brush the halloumi slices with olive oil. Grill each slice for about 2-3 minutes on each side, until they are golden brown with clear grill marks. Remove from heat and let them cool slightly.
In a large bowl, combine the cubed watermelon, sliced cucumber, and chopped mint leaves.
In a small bowl, whisk together 1/4 cup of extra-virgin olive oil, 2 tablespoons of lime juice, and 1 teaspoon of honey (if using). Season with salt and pepper to taste.
Pour the dressing over the watermelon salad and gently toss to combine.
Arrange the grilled halloumi slices on top of the watermelon salad. Serve immediately, either plated individually or in a large serving dish family-style.
Notes
For an added flavor, try sprinkling some crumbled feta cheese on top of the salad, or add a handful of arugula for a peppery bite.
