Use fine (No.1) bulgur for classic, fluffy texture. If you only have medium bulgur, increase the soak to 15–20 minutes or briefly simmer, then drain and cool completely.
Gluten-Free Swap: Replace bulgur with 1 1/2 cups cooked, cooled quinoa; toss with the dressing while quinoa is cold to keep herbs perky.
