Roasted corn, chipotle-lime dressing, and crisp tortilla strips deliver contrast in every bite—creamy, zesty, and lightly smoky. High-protein tuna and hearty black beans make it satisfying without feeling heavy.
Preheat and Prepare the Pan: Preheat the oven to 425°F / 220°C. Line a sheet pan with parchment for easy cleanup.
Roast Corn and Bake Tortilla Strips: In a bowl, toss 1 1/2 cups corn with 2 tsp neutral oil, 1/2 tsp chili powder, and 1/4 tsp kosher salt. Spread on half the pan. In the same bowl, coat the tortilla strips with 2 tsp neutral oil and a pinch of salt; spread on the other half. Bake until the corn is blistered and the strips are crisp, 10–12 minutes, stirring the corn once halfway. Cool on the pan for 5 minutes to set the crunch.
Toast and Crush the Cumin: While the pan is in the oven, warm a dry skillet over medium heat. Add 1 tsp cumin seeds and toast, stirring, until fragrant, about 2 minutes. Transfer to a mortar and crush to a coarse powder (or pulse in a spice grinder).
Whisk the Chipotle–Lime Dressing: In a medium bowl, whisk together 3 tbsp lime juice, 3 tbsp olive oil, 1 tsp honey, grated garlic, 1 tsp minced chipotle in adobo, and the crushed cumin. Season with 1/2 tsp kosher salt and 1/4 tsp black pepper, then whisk until fully emulsified and glossy, 20–30 seconds.
Prep the Proteins and Veg: Drain and flake the tuna. Rinse and drain the black beans thoroughly in a colander. Small-dice the red bell pepper; halve the cherry tomatoes; finely dice the red onion; mince the jalapeño; slice the romaine; chop the cilantro; and dice the avocado last to minimize browning.
Build the Salad: In a large mixing bowl, combine the tuna, black beans, bell pepper, tomatoes, red onion, jalapeño, romaine, and the roasted corn. Pour in the dressing and fold gently with a spatula until evenly coated and glossy, 30–45 seconds.
Finish and Season: Fold in the avocado and lime zest just before serving. Taste and adjust with a pinch more salt or a squeeze of lime if needed. Plate and top with the crisp tortilla strips and Cotija.
