Instructions
Preheat your oven to 400°F / 200°C (180°C fan-forced).
Trim any excess fat from the chicken breasts and place them in a 9x13 inch (23x33cm) baking dish. Drizzle with olive oil and season with salt, pepper, chipotle chilli powder, cumin, and oregano, turning the breasts to coat evenly. Bake for 22-25 minutes or until the internal temperature reaches 165°F / 74°C. Rest for 5 minutes before dicing.
While the chicken rests, place the spinach in a medium saucepan over medium heat. Stir frequently for 1-2 minutes until just wilted but still bright green — do not overcook or it will turn mushy. Remove from heat and gently squeeze out any excess liquid.
