This is a cold salad built on a classic Cantonese pairing: bitter melon and scrambled egg. The bitterness is real but manageable, and the whole thing comes together in 30 minutes with a short ingredient list. If youโ€™ve never cooked bitter melon before, this is a low-stakes way to start.

Ingredient notes

  • Bitter melon: Look for it at Asian grocery stores or well-stocked international markets. Choose firm, bright green ones โ€” pale or yellowing skin means itโ€™s overripe and much more bitter. Pour in the eggs, allow to set briefly (about 10 seconds), then gently stir from the edges inward until soft curds form. Remove from heat while still slightly runny; the residual heat will finish the cooking.
