Spiced Shawarma Chicken Salad with Tahini Dressing

by Amanda McKillop
Chicken Shawarma Salad Bowl

This is a full-meal salad built around chicken thighs marinated in cumin, coriander, paprika, turmeric, cinnamon, and cayenne, then roasted at high heat until the edges char. The tahini-yogurt dressing, chickpeas, feta, and pita chips mean you wonโ€™t be hungry an hour later. It takes about an hour start to finish, most of that hands-off marinating time.

The short version of why this works

Two things carry this recipe. First, the wire rack. Setting the chicken thighs on a rack over the sheet pan lets hot air circulate underneath, so the bottoms crisp instead of steam โ€” you get browned edges on all sides without flipping. Second, the tahini dressing only works if the tahini is properly stirred before measuring. Tahini separates in the jar, and spooning from an unstirred jar gives you either pure oil or a stiff paste; neither emulsifies cleanly with the yogurt and lemon. Stir it to a smooth, pourable consistency first, and the dressing will coat the greens rather than pool at the bottom of the bowl.

If something goes sideways

  • The chicken is cooked through but pale and soft: Your oven likely runs cool, or the pan was overcrowded. Spread thighs with space between them and switch to the broiler for the final 2-3 minutes to get color and crisp edges.
  • The dressing is too thick to pour: Add water a teaspoon at a time and whisk. Tahini thickens further as it sits, so thin it slightly more than you think you need before dressing the salad.
  • The romaine is wilting under the warm chicken: Let the sliced chicken rest on a cutting board for 3-4 minutes before laying it over the greens. It wonโ€™t go cold, but it wonโ€™t immediately wilt everything beneath it either.
  • The pita chips go soft: Dress it at the table โ€” a pre-dressed salad goes limp fast, and pita chips are the first casualty. Keep them in a separate bowl and scatter them on each portion just before eating.
  • The salad tastes flat even after dressing: The fix is almost always salt and sumac. Taste the assembled bowl and add a pinch of kosher salt directly to the greens, then dust sumac more generously than feels right โ€” itโ€™s the acid that ties the spiced chicken to the fresh vegetables.

Make-ahead notes

The chicken can be marinated up to 24 hours ahead in the refrigerator โ€” longer than 24 hours and the lemon juice starts to break down the texture. Roast it, let it cool completely, then refrigerate for up to 3 days; slice it cold and add it straight to the bowl, or warm the slices in a dry skillet for 2 minutes if you prefer. The tahini-yogurt dressing keeps well in a sealed jar in the fridge for up to 4 days โ€” whisk in a small splash of water before using because it thickens as it chills. Chop the romaine, cucumber, radish, and red onion up to a day ahead and store them together in an airtight container lined with a paper towel to absorb moisture. Cherry tomatoes, parsley, and mint are best cut the day of. Keep the pita chips at room temperature in their own container and add them only when youโ€™re ready to serve.

Inspired by Levantine street-side shawarma, this salad bowl layers spiced, roasted chicken over a crisp, herb-laced bed of greens with tangy tahini-yogurt dressing. Smoky paprika, cumin, and turmeric perfume the chicken while lemon lifts every bite. Expect contrast: juicy, charred-edged meat, crunchy vegetables, toasty pita, and a bright finish of sumac and fresh herbs.

For the Tahini Yogurt Dressing:

  • โ…“ cup plain Greek yogurt whole milk preferred
  • 3 tbsp tahini well-stirred
  • 2 tbsp fresh lemon juice
  • 1 tbsp water plus more as needed to thin
  • 1 clove garlic small; finely grated
  • ยฝ tsp honey
  • ยผ tsp kosher salt or to taste
  • 1 tbsp extra-virgin olive oil

For the Salad Base & Add-Ins:

  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup Persian cucumber diced
  • โ…“ cup red onion very thinly sliced
  • ยฝ cup canned chickpeas drained and rinsed
  • ยฝ cup radishes thinly sliced
  • ยฝ cup fresh parsley leaves roughly chopped
  • ยผ cup fresh mint leaves torn
  • ยฝ cup feta cheese crumbled
  • 2 cups pita chips warmed and broken into bite-size pieces

For Garnish & Serve:

  • 1 tsp ground sumac
  • 1 medium lemon cut into wedges
  • 2 tbsp extra-virgin olive oil for finishing

Instructions

  • Marinate the Chicken: In a large bowl, whisk olive oil, lemon juice, grated garlic, kosher salt, cumin, coriander, paprika, turmeric, cinnamon, cayenne, and black pepper until the spices bloom and the mixture looks glossy. Add chicken thighs and turn to coat, massaging the marinade into every surface. Cover and refrigerate for 30 minutes (custom time) or up to 12 hours.
  • Prep the Oven: Set a wire rack over a rimmed sheet pan and lightly oil it to prevent sticking. Preheat the oven to 425ยฐF / 220ยฐC; position a rack in the center.
  • Roast the Chicken: Arrange marinated thighs on the rack, shaking off excess marinade. Roast at 425ยฐF / 220ยฐC for 18โ€“20 minutes, rotating the pan halfway, until the juices run clear and the thickest part reads 165ยฐF / 74ยฐC on an instant-read thermometer. For charred edges, switch to broil on high (500ยฐF / 260ยฐC) for 1โ€“2 minutes; watch closely.
  • Rest and Slice: Transfer chicken to a board and rest 2โ€“4 minutes to redistribute juices. Slice across the grain into bite-size strips with a sharp knife.
  • Make the Dressing: In a small bowl, whisk yogurt, tahini, lemon juice, water, grated garlic, honey, and kosher salt until smooth and emulsified. Stream in olive oil while whisking until the dressing is creamy and flows in a ribbon; adjust with a splash of water for drizzling consistency.
  • Build the Salad Base: In a large bowl, combine romaine, cherry tomatoes, cucumber, red onion, chickpeas, radishes, parsley, and mint. Toss lightly with half of the dressing to coat without wilting.
  • Assemble the Bowls: Divide the dressed salad among 4 bowls. Top with warm sliced chicken, sprinkle with feta, tuck in pita chips for crunch, and drizzle with remaining dressing.
  • Finish and Serve: Sprinkle sumac over each bowl, finish with a light thread of olive oil, and serve immediately with lemon wedges for squeezing.

Notes

Chefโ€™s Tips:

  • For deeper flavor, marinate the chicken overnight; remove from the fridge 15 minutes before roasting for even cooking.
  • Grill Option: Cook over medium-high heat (about 425ยฐF / 220ยฐC grill temp) 5โ€“6 minutes per side until 165ยฐF / 74ยฐC internal, then rest before slicing.
  • Spice Balance: If heat-sensitive, swap cayenne for a pinch more paprika. Prefer smokiness? Add 1/2 tsp smoked paprika to the marinade.
  • Ultra-Crisp Pita: Warm chips briefly on a sheet pan during the last 3 minutes of roasting for extra crunch.
  • Dressing Control: Thin with water in 1-teaspoon increments; it should coat a spoon but still drip smoothly.
  • Batching: Double the chicken and freeze sliced portions for quick future saladsโ€”reheat gently so it stays juicy.

Your questions, answered

Can I use chicken breasts instead of thighs?

You can, but the result will be drier. Breasts have less fat than thighs and cook faster, so check them at 18 minutes and pull them the moment they hit 165ยฐF internal temperature โ€” any longer and theyโ€™ll be chalky by the time they hit the salad.

Is 30 minutes of marinating time actually enough?

Yes, 30 minutes is the practical minimum and it works. The spices bloom in the olive oil and coat the surface of the chicken, which is where most of the flavor lives anyway โ€” a longer marinade deepens it but isnโ€™t required for a good result.

Can I skip the Greek yogurt and make the dressing with just tahini?

Yes. Replace the yogurt with an equal amount of additional tahini and increase the water by a tablespoon or two until the dressing is pourable. The result is richer and slightly more bitter, so taste and adjust the lemon juice and honey accordingly.

What can I use instead of pita chips if I donโ€™t have any?

Toasted flatbread torn into pieces works directly. If you have neither, a small handful of toasted pumpkin seeds or sunflower seeds gives you the crunch component without going out to buy anything.
