Bring a medium saucepan of water to a gentle boil. Carefully lower the eggs into the water with a slotted spoon. Cook for 6-7 minutes for a soft, jammy yolk. Transfer to an ice bath for 2 minutes, then peel and halve lengthwise. Set aside.
