Instructions
In a small bowl, gradually stir about ½ cup (120ml) of the olive oil into the crumbled Roquefort until the cheese is evenly coated and combined.

Transfer the cheese and oil mixture to a 16 oz (500ml) screw-top jar or mason jar.
Add the remaining ½ cup (120ml) olive oil, white wine vinegar, lemon juice, capers, sugar (if using), salt, garlic salt, and pepper. Seal the jar tightly and shake vigorously for 20-30 seconds until the dressing looks emulsified.
