  • 4 medium tomatoes ripe, diced
  • 1 medium cucumber peeled and diced
  • 1 medium red bell pepper deseeded and diced
  • 1 small red onion finely chopped
  • 1 small bunch fresh parsley finely chopped
  • 4 oz Bulgarian white cheese (Sirene) or Feta, grated or crumbled
  • 2 tbsp extra virgin olive oil high quality
  • 1 tbsp red wine vinegar or apple cider vinegar
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper freshly ground

Instructions
 

  • Prepare the vegetables by dicing the tomatoes, cucumber, and red bell pepper into small, bite-sized pieces. Finely chop the red onion and parsley.
  • In a large mixing bowl, combine the diced vegetables and chopped parsley. Toss gently to mix evenly.
  • Drizzle the olive oil and red wine vinegar over the salad. Season with salt and black pepper, then toss gently to coat the vegetables.
  • Grate or crumble the Bulgarian Sirene (or Feta cheese) over the top of the salad. Do not mix to maintain the traditional look.
  • Serve immediately or let the flavors meld for 10 minutes before serving.

Notes

  • For an extra boost of flavor, you can roast the red bell pepper before dicing it.
  • Additionally, serve with a side of crusty bread to soak up the delicious dressing.
