Appetizing Winter Quinoa Salad Recipe

Warm Winter Quinoa Salad with Chickpeas & Cranberries

This is a warm quinoa salad built around chickpeas, toasted almonds, dried cranberries, and fresh herbs, cooked in chicken broth and finished with balsamic vinegar and cinnamon. It makes two generous servings โ€” each around 1,200 calories โ€” so it eats more like a main course than a side. The real reason to make it: it holds up well over several days, which means you cook once and eat well all week.

Smart swaps

  • Chicken broth: Vegetable broth works directly in its place if you want to keep this fully plant-based.
  • Fresh mint: Mint is assertive here โ€” if you find it overpowering, cut it by half and add extra parsley. Dried mint is too flat; skip it if thatโ€™s all you have.
  • Dried cranberries: Dried cherries or raisins substitute well. Just check for added sugar on the label if you want less sweetness.
  • Slivered almonds: Toasted pepitas or chopped walnuts give a similar crunch. Toast them yourself in a dry pan โ€” pre-toasted nuts from a bag have usually lost most of their texture.
  • Garbanzo beans: Canned are fine. Rinse them well after draining so the starchy liquid doesnโ€™t muddy the flavor of the finished salad.

The technique that matters

Two things determine whether this salad is good or just okay. First, cook the quinoa in broth rather than water โ€” the grain absorbs the liquid completely, so every bit of flavor stays in the salad rather than going down the drain. Watch the heat: a hard boil makes the quinoa blow out and turn mushy; a steady simmer keeps the grains intact with that slight bite you want. Second, let the onion go fully golden before adding the beans. A pale, undercooked onion tastes sharp and raw; a properly caramelized one adds a mild sweetness that balances the balsamic vinegar and cinnamon. Donโ€™t rush either step โ€” add the balsamic off the heat so it doesnโ€™t cook away before it coats anything.

If something goes sideways

  • Salad tastes flat: Balsamic vinegar needs salt to wake it up. Add a pinch more salt and taste again before serving โ€” this is the most common fix needed.
  • Quinoa is gummy or wet: The broth wasnโ€™t fully absorbed before you pulled it off the heat. Spread the quinoa on a baking sheet for five minutes; it dries out quickly and the texture recovers.
  • Herbs turn dark and wilted: The quinoa-bean mixture was still too hot when you added the herbs. Cool the mixture for at least five minutes before stirring in the parsley and mint.
  • Almonds go soft: They were added too early and absorbed moisture from the warm salad. Keep them separate and add just before serving โ€” store them in a small zip bag if youโ€™re prepping ahead.
  • Cinnamon tastes medicinal: A half teaspoon is the recipe amount, but cinnamon strength varies by brand. Start with a quarter teaspoon, stir, taste, and add more only if needed.

Keeping leftovers crisp

Store the salad in an airtight container in the refrigerator for up to four days โ€” the quinoa and bean base actually improve overnight as the balsamic and cinnamon settle in. Keep the toasted almonds in a separate small container; add them at the table, not before, because they go soft within a few hours of contact with the dressing. The herbs will darken slightly by day two but still taste fine. Serve leftovers at room temperature rather than cold โ€” pull the container out about 20 minutes before eating, since cold quinoa has a dense, heavy texture that the warm version doesnโ€™t. If the salad seems dry after a day in the fridge, a small splash of olive oil and a few drops of balsamic will bring it back.

  • 1 cup quinoa 170g
  • 1 cup dried cranberries 120g
  • 2 cups chicken broth 480ml
  • ยฝ cup Italian parsley chopped, 30g
  • ยผ cup olive oil 60ml
  • โ…“ cup fresh mint chopped, 20g
  • 1 ยฝ cups onion chopped, about 1 large onion (225g)
  • ยพ cup slivered almonds toasted, 65g
  • ยฝ teaspoon fine sea salt or to taste
  • ยผ teaspoon ground black pepper or to taste
  • 2 cups canned chickpeas drained and rinsed, about one 15 oz / 425g can (340g)
  • ยฝ teaspoon ground cinnamon
  • 2 tablespoons balsamic vinegar 30ml

Instructions

  • Place the quinoa in a fine-mesh strainer and rinse under cold running water for 30โ€“60 seconds, swirling with your hand, until the water runs clear. This removes saponin, a natural coating that can give quinoa a bitter taste.
    1 cup quinoa
  • Bring the chicken broth to a boil in a large saucepan over high heat. Add the rinsed quinoa, stir once, then reduce the heat to low. Cover and simmer for 15โ€“20 minutes, or until all the broth is absorbed and the quinoa is tender with visible spiral-shaped germs. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.
1 cup quinoa, 2 cups chicken broth
  • While the quinoa cooks, heat the olive oil in a 10-inch (25cm) skillet over medium heat. Add the chopped onion and sautรฉ for 8โ€“10 minutes, stirring occasionally, until fully golden and softened. Add the drained chickpeas and ground cinnamon, then stir well and cook for 2 minutes until the chickpeas are warmed through. Remove the skillet from the heat.
1/4 cup olive oil, 1 1/2 cups onion, 2 cups canned chickpeas, 1/2 teaspoon ground cinnamon
  • Transfer the fluffed quinoa to the skillet with the chickpea-onion mixture and toss to combine.
1 cup quinoa, 1 1/2 cups onion, 2 cups canned chickpeas
  • Drizzle the balsamic vinegar over the warm salad (off the heat so it doesnโ€™t evaporate). Add the dried cranberries, chopped Italian parsley, and chopped fresh mint. Toss gently until everything is evenly distributed.
2 tablespoons balsamic vinegar, 1 cup dried cranberries, 1/2 cup Italian parsley, 1/3 cup fresh mint
  • Season with salt and pepper to taste. Transfer to serving bowls and sprinkle the toasted slivered almonds on top just before serving.
1/2 teaspoon fine sea salt, 1/4 teaspoon ground black pepper, 3/4 cup slivered almonds
  • Serve at room temperature for the best texture and flavour. If serving later, let the salad sit at room temperature for 15โ€“20 minutes after removing from the fridge.

Notes

Storage: Keep the quinoa-chickpea base in an airtight container in the fridge for up to 4 days. Store toasted almonds separately and add just before serving to keep them crunchy.
Freezing: The base (without almonds and fresh herbs) freezes well for up to 2 months. Thaw overnight in the fridge and stir in fresh herbs before serving.
Make-Ahead: Prepare the full base up to 3 days ahead. Let it come to room temperature for 15โ€“20 minutes before serving, then add almonds and a small splash of olive oil if it looks dry.
Substitutions: Swap chicken broth for vegetable broth to make this vegetarian. Use pepitas instead of almonds for a nut-free version.
Pro Tip: Add the balsamic vinegar off the heat so it coats the chickpeas and quinoa rather than evaporating on contact with a hot pan.

Your questions, answered

Can I make this salad ahead of time?

Yes โ€” the base keeps well for up to four days in the refrigerator. Make the full quinoa-bean mixture in advance, but store the almonds separately and add them right before eating so they stay crunchy.

Is this salad served hot, warm, or cold?

The recipe calls for serving it at room temperature, which is the best option. Cold quinoa straight from the fridge turns dense; letting it sit out for 15 to 20 minutes before eating makes a real difference in texture.

The calorie count seems very high โ€” is that right?

Yes, at roughly 1,190 calories per serving this is a full meal, not a light side salad. The combination of quinoa, two cups of chickpeas, three-quarters of a cup of almonds, and a quarter cup of olive oil across just two servings accounts for most of it โ€” keep that in mind if youโ€™re serving it alongside other dishes.
