  • 1 tsp white vinegar Apple cider vinegar works as well
  • 1 tsp salt To taste
  • ½ tsp black pepper Freshly ground

Instructions
 

  • Boil the beets, potatoes, and carrots separately in a large pot of water until fork-tender, about 30–45 minutes. Drain and let cool.
  • Once cool, peel the beets, potatoes, and carrots. Dice all vegetables into small, evenly sized cubes.
  • Dice the pickles and red onion finely to ensure even distribution of flavor.
  • Combine all diced vegetables and green peas in a mixing bowl.
  • In a small bowl, whisk together sunflower oil, vinegar, salt, and black pepper.
  • Pour the dressing over the vegetables and mix gently with a wooden spoon until well combined. Be careful not to mash the ingredients.
  • Let the salad sit for at least 15 minutes before serving, allowing the flavors to meld.

Notes

  • For a more vibrant color, mix the beets separately with a little oil before adding to the rest of the ingredients. This helps prevent the entire salad from turning deep red.
