Delicious Moroccan Carrot Salad Recipe

Moroccan Carrot Salad Fresh, Spiced & Ready in 15 Min

This Moroccan carrot salad comes together in 15 minutes with no cooking required. Two medium carrots, a handful of pantry spices, and a quick whisked dressing are all it takes. It works as a side for four or a light lunch for two.

What makes this version work

Freshly grated carrot is the key call here โ€” it has more surface area than sliced or julienned carrot, so the cumin-cinnamon-coriander dressing actually coats every shred rather than sliding off. The dressing itself does double duty: lemon juice keeps the carrots bright while honey rounds out the spice without making things sweet. Whisk the oil in last so it emulsifies slightly and clings instead of pooling at the bottom of the bowl.

About the ingredients

  • Dried cranberries: These are tart and chewy โ€” if yours are very sweet, cut the honey to half a teaspoon to keep the dressing balanced.
  • Sliced almonds: They add crunch without bulk. Toasting them dry in the same pan youโ€™ll use for nothing else takes 90 seconds and sharpens the flavor noticeably.
  • Ground coriander and cinnamon: Both are common pantry spices, but check that yours arenโ€™t stale โ€” old ground spices go flat and this dressing relies on them for most of its character.
  • Fresh mint: Dried mint wonโ€™t work here; the fresh leaf is what cuts through the earthy spices. Flat-leaf parsley is a reasonable swap if mint isnโ€™t available.

Mistakes to avoid

  • Skipping the squeeze: Freshly grated carrot releases water as it sits. Give the grated carrot a quick squeeze in a clean towel before adding it to the bowl, or your dressing will dilute and pool.
  • Adding too much lemon upfront: Start with the full tablespoon, then taste after tossing. Carrots vary in sweetness and you may want to adjust before serving.
  • Overdressing: This is a small-volume salad. Pour the dressing in gradually โ€” you may not need every drop, especially if the carrots were very juicy.
  • Cutting the onion too thick: Red onion needs to be finely chopped, not roughly diced. Large pieces overpower every other flavor in the bowl.
  • Adding almonds too early: Dress it at the table โ€” a pre-dressed salad goes limp fast, and the almonds lose their crunch within minutes of hitting the dressing.

Keeping leftovers crisp

If you know youโ€™ll have leftovers, store the dressing separately in a small jar and keep the tossed vegetables in an airtight container in the fridge. The undressed carrot mixture holds well for up to two days. Once dressed, the salad is best within a couple of hours โ€” the cranberries and onion stay fine, but the almonds soften and the mint wilts after that. If youโ€™re packing it for lunch, bring the almonds and dressing in separate containers and combine just before eating.

  • 2 medium carrots about 200g / 7oz, freshly grated
  • 1 tablespoon fresh mint chopped, about 6 leaves
  • ยผ cup dried cranberries 30g
  • ยผ cup red onion finely chopped, 40g
  • ยผ cup sliced almonds 25g
  • ยฝ teaspoon ground cumin
  • ยฝ teaspoon ground coriander
  • ยฝ teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice 15ml, about half a lemon
  • 1 teaspoon honey or agave syrup 7g
  • 1 tablespoon extra-virgin olive oil 15ml
  • ยผ teaspoon fine sea salt plus more to taste
  • 1 pinch ground black pepper

Instructions

  • In a large mixing bowl, combine the freshly grated carrots, chopped mint, dried cranberries, finely chopped red onion, and sliced almonds. Toss gently to distribute evenly.
2 medium carrots, 1 tablespoon fresh mint, 1/4 cup dried cranberries, 1/4 cup red onion, 1/4 cup sliced almonds
  • In a small bowl, whisk together the ground cumin, ground coriander, ground cinnamon, lemon juice, and honey until combined. Drizzle in the olive oil while whisking continuously so the dressing emulsifies slightly.
1/2 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/2 teaspoon ground cinnamon, 1 tablespoon fresh lemon juice, 1 teaspoon honey or agave syrup, 1 tablespoon extra-virgin olive oil
  • Pour the dressing over the carrot mixture and toss thoroughly until every shred is coated. Season with salt and pepper to taste. Let the salad sit for 5 minutes before serving to allow the flavours to meld.
1/4 teaspoon fine sea salt, 1 pinch ground black pepper

Notes

Storage: Keep undressed carrot mixture in an airtight container in the fridge for up to 2 days. Store dressing separately in a small jar. Once dressed, the salad is best eaten within 2 hours before the almonds soften and mint wilts.
Make-Ahead: Grate the carrots, chop the onion and mint, and whisk the dressing up to a day ahead. Store each component separately and toss together just before serving.
Substitutions: Swap cranberries for golden raisins or chopped dried apricots for a more traditional Moroccan flavour. Use agave syrup in place of honey for a fully vegan version. Pistachios or toasted pine nuts work in place of almonds.
Meal Prep Tip: For packed lunches, keep the almonds and dressing in separate small containers and combine everything just before eating to maintain crunch.
Pro Technique: Toast the cumin, coriander, and cinnamon in a dry pan over medium heat for 30โ€“60 seconds until fragrant before whisking into the dressing โ€” this blooms the spices and intensifies the Moroccan flavour profile significantly.

Your questions, answered

Can I use pre-shredded carrots from a bag?

You can, but the texture will be coarser and the pieces wonโ€™t hold the dressing as well. Freshly grated carrot is finer and more tender, which makes a real difference in a salad this simple.

Is this salad vegan?

Yes, every ingredient in this recipe is plant-based. Just confirm your honey source if that matters to you โ€” agave syrup works as a direct swap in the same quantity.

Can I make this ahead for a dinner party?

Prep all the components up to a day in advance and refrigerate them separately. Whisk the dressing and store it in a jar, then toss everything together just before serving so the almonds stay crunchy.

What can I serve this alongside?

It pairs well with grilled chicken, lamb, or falafel โ€” anything with a bit of char or richness benefits from the bright, spiced carrot alongside it. It also works as part of a spread of small dishes.
