I was anxious to experiment and try a new recipe last night, so I switched things around on the menu with this zesty lime chicken salad! Typically, when I make a chicken salad, it’s your typical recipe, including chopped chicken, mayo, grapes(halved), chopped celery, and a dash of sugar, salt, and pepper. This time I wanted to try something a little different.

I had some English bread on hand, so I buttered one side and threw it on the skillet for a few minutes until golden brown. Finally, the bread was warm, the zesty lime chicken salad was cold, and the sandwich was delicious!

I plan to have this for dinner tonight as a lettuce wrap. My brother stopped by on his way for errands, so I made him try a bite. He liked the taste of it; he just wasn’t sure of the texture(but he always gives me a hard time adding fruit to my lettuce salads, so I expected that-plus I knew he had never tried a red or yellow bell pepper).

I like tanginess in my salads and I always make use of lime to add that in my recipes. This time, I explore the kitchen and made this super delicious lime chicken salad recipe that's so easy to make.

Salad Ingredients

  • 2 cups chicken breast cooked and shredded
  • ½ medium tomato diced
  • cup red onion diced
  • cup bell pepper yellow and red, diced
  • 2 tablespoons cilantro

Dressing Ingredients

  • ½ cup mayonnaise
  • ½ teaspoon cumin
  • ½ teaspoon garlic salt
  • 1 dash salt
  • 1 dash black pepper
  • 1 dash cayenne pepper
  • 1 medium lime juiced


  • Mix all of the salad ingredients together in a medium-sized bowl. Set aside.
  • Stir into the chicken mixture. Serve on lightly toasted bread, a soft tortilla shell(as a wrap), or romaine lettuce(either as a salad or as a wrap).
