I was anxious to experiment and try a new recipe last night, so I switched things around on the menu with this zesty lime chicken salad! Typically, when I make a chicken salad, it’s your typical recipe, including chopped chicken, mayo, grapes(halved), chopped celery, and a dash of sugar, salt, and pepper. This time I wanted to try something a little different.
I had some English bread on hand, so I buttered one side and threw it on the skillet for a few minutes until golden brown. Finally, the bread was warm, the zesty lime chicken salad was cold, and the sandwich was delicious!
I plan to have this for dinner tonight as a lettuce wrap. My brother stopped by on his way for errands, so I made him try a bite. He liked the taste of it; he just wasn’t sure of the texture(but he always gives me a hard time adding fruit to my lettuce salads, so I expected that-plus I knew he had never tried a red or yellow bell pepper).
Zesty Lime Chicken Salad Recipe
Ingredients
Salad Ingredients
- 2 cups chicken breast cooked and shredded
- ½ medium tomato diced
- â…› cup red onion diced
- â…› cup bell pepper yellow and red, diced
- 2 tablespoons cilantro
Dressing Ingredients
- ½ cup (affiliate link)mayonnaise
- ½ teaspoon cumin
- ½ teaspoon garlic salt
- 1 dash (affiliate link)salt
- 1 dash (affiliate link)ground black pepper
- 1 dash cayenne pepper
- 1 medium lime juiced
Instructions
- Mix all of the salad ingredients together in a medium-sized bowl. Set aside.
- Stir into the chicken mixture. Serve on lightly toasted bread, a soft tortilla shell(as a wrap), or romaine lettuce(either as a salad or as a wrap).
