I actually stole the idea from a Wagamama dressing we used for a chicken salad, but it works wonders for beans, and I also used it with prawns. It is tangy, spicy, sweet, a perfect combo for a salad dressing. You will undoubtedly love it.
Bean Salad With Spicy Miso Salad Dressing
Bean salad is such a comfort food for me and I love having it when I want a healthy but filling salad. Here's a simple recipe I always make at home.
Ingredients
Miso Dressing Ingredients
- 1 teaspoon miso paste or any other bean paste
- 5 tablespoons mayonnaise
- 2 teaspoons sesame oil
- 2 teaspoons rice vinegar
- 1 teaspoon soy sauce
- 1 teaspoon agave syrup
- 1 tablespoon lime juice
- 1 teaspoon sashimi
White Bean Salad Ingredients
- 1 can white beans drained
- ⅓ medium cucumber
- 15 leaves lettuce
- 10 small cherry tomatoes or plum tomatoes
- 4 tablespoons miso dressing
Instructions
- Combine all of the dressing ingredients in a bowl until you get a smooth paste.
- Mix white beans, chopped cucumber, chopped lettuce, and the tomatoes cut in quarters in a bigger bowl. Season with the miso dressing and serve.
