If I could describe this Cucumber, Avocado and Mango Salad in one word, it would be fresh. It is such a light and refreshing combination of some of my favourite fruits and veggies, and it only takes a couple of minutes to throw together. It’s the perfect quick and easy lunch fix, or it makes a great side salad to go with a heavier main course.

Along with the winning flavour combination, this is also a winner as far as nutrients go. Mangos are packed with cancer-fighting compounds, vitamins A and C, and alkalizing minerals like tartaric acid and malic acid. Cucumbers are great for cleaning out toxins, hydrating, helping with digestion, and are a natural diuretic.

Avocados are packed with vitamin E, lutein, oleic acid, and cholesterol-lowering compounds. And the dressing is made with the “good fats” from olive oil, the healing properties of apple cider vinegar, the energy-boosting power of honey, and the cancer-fighting oleic acid found in poppy seeds.
