This tasty salad includes pumpkin seeds, avocado, and grape tomatoes. It’s topped with a vinaigrette that has a hint of lemon. Artichokes are a fun addition to salads. They’re also nutritious. You may not think of artichokes when you look for foods with antioxidants, but they’re among the top vegetables in this category.

This salad is healthy and filling for a vegetarian lunch. The pumpkin seeds add to the crunch factor, and the artichokes add a bite. You can make this at home and bring it to work or school or enjoy it as a picnic side dish.
